Measuring 19 inches long and 10-1/2 inches wide, this range-top griddle spans two burners and can churn out large quantities of pancakes, bacon, grilled cheese sandwiches, or burgers to a waiting crowd. The griddle is constructed of heavy, hand-cast aluminum, which provides excellent heat conduction so foods cook evenly at lower temperatures. The top of the griddle is coated with an Excalibur nonstick surface, reputed to be the toughest nonstick material available because it is reinforced with stainless steel. The coating promotes healthier cooking with fewer fats and easily rinses clean in hot soapy water, requiring no seasoning to maintain its performance. For more help with fat-free cooking, the griddle has a grooved edge that drains away all fats from meats and channels them into a corner well. Perhaps the most unique feature of this griddle, however, is its defrosting ability. Without using any heat, the aluminum construction actually transfers natural heat from the air to frozen foods placed on the griddle's surface. Although a bit slower than using the microwave, thawing on this griddle ensures that the edges of foods don't get cooked and dried out as they do during microwave thawing. Thawing time ranges from about 15 minutes for a single hamburger patty to about 45 minutes for a 1-inch-thick steak and requires that the food is turned once for even defrosting and for retaining the food's flavor and juiciness. To keep the nonstick surface intact, the manufacturer recommends against using abrasive sponges, metal utensils, and the dishwasher.
