A wok is the traditional Chinese-style deep cooking pan. Now popular in the West, the wok has become synonymous with Oriental cooking. The inverted round shape of the traditional wok is excellent for quick-cooking, stir-frying, steaming and sautéing. Its depth allows for less oil to be needed and each piece of food slides gently down the rounded sides of the wok, preventing splashes of hot oil. The small, condensed bottom and thin sides of a wok allow for quick heating of the oil and better temperature gauging.
